Teff flour is produce by milling grains of teff. The word 'teff' is thought to have come from the Amharic word for 'lost' – this is often assumed to be because of their small size. Teff grains are about the size of a poppy seed. Teff is high in dietary fiber and iron, it also provides large amounts of protein and calcium compared to other grains. Teff flour is an excellent gluten-free substitute for wheat flour for use in breads, cakes, cookies, and other baked goods.
