Shirataki noodles are a translucent, gelatinous traditional Japanese noodle made from konjac yams, also know as elephant yams. These noodles are composed of glucomannan, a dietary fiber, making the noodles gluten free virtually zero calories. Tofu is often added to these noodles to give them a softer texture. The addition of tofu increases the calorie and carbohydrate content, but it is still quite low.
