Berry Quinoa Muffins Recipe

Berry Quinoa Muffins
With 5 grams of protein and only 60 calories each these gluten free muffins are a great way to start the day or the perfect pre-workout snack.
  • ¾ cup quinoa flakes or quinoa flour
  • 2 whole eggs
  • 5 egg whites
  • 1 scoop vanilla protein powder
  • ⅓ cup berries (raspberries, blueberries, strawberries)
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • ½ tsp stevia extract
Prep Time:  10 minutes
Cook Time:  12 minutes
Servings:   12 cupcakes
  • Preheat your oven to 375°F.
  • Add whole eggs, egg whites, and vanilla to a blender.
  • Blend for 10 seconds.
  • Add quinoa flakes or flour, protein powder, cinnamon and stevia to the blender.
  • Blend for 30 seconds or until smooth.
  • Add berries (frozen ones work great) to the bender.
  • Blend for 10 seconds.
  • Pour the batter into 12 small silicone muffin cups.
  • Bake for 12 minutes.
  • Remove from muffin cups and place on cooling rack for 10 minutes.
