Broccoli Cheddar Soup
Swapping the cream for unsweetened almond milk makes this broccoli cheddar soup a guilt-free alternative to a favourite comfort food.
  • 1 cup unsweetened almond milk
  • 4 oz ham
  • 8 oz broccoli
  • 1 oz shredded cheddar cheese
  • ½ tsp salt

Servings:   1 large bowl
  • Soften broccoli a pot over medium heat in half an inch of water.
  • Once soft (about 5 minutes) add broccoli and almond milk to a blender until smooth.
  • Pour mixture back in the pot and continue to heat.
  • Add cubed ham and salt to taste.
  • Once soup is simmering add cheese and stir continuously until melted.
  • Best served immediately.
