Chicken Fingers
Chicken fingers don't have to be unhealthy. This chicken finger recipe is quick, easy and makes the perfect gluten free, low carbohydrate meal.
  • 1 egg
  • 1 chicken breast
  • 2 cups pork rinds
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp oregano
  • ¼ tsp black pepper
Prep Time:  10 minutes
Cook Time:  12 minutes
Servings:   1 serving
  • Preheat your oven to 425°F.
  • Cut the chicken breast into long strips.
  • Put pork rinds to a blender or food processor until they reach the consistency of bread crumbs.
  • Mix the pork rind bread crumbs with the onion powder, garlic powder, salt, oregano and black pepper. Place the mixture in an even layer on a plate.
  • Whisk the egg in a bowl.
  • Dip each piece of chicken into the egg and then roll in the bread crumb mixture.
  • Evenly space the chicken fingers on a baking sheet.
  • Bake for 12 minutes.
