Omelette Bites
Omelettes are a great protein rich way to start the day. Make these ahead of time for a weeks worth of healthy breakfasts.
  • 4 large eggs
  • ¼ cup milk
  • 1 cup chopped mixed vegetables (mushrooms, broccoli, spinach)
  • ¼ cup grated cheese [optional]
  • ½ tbsp butter
  • ½ tsp salt
  • ½ tsp black pepper
Prep Time:  15 minutes
Cook Time:  30 minutes
Servings:   5 servings
  • Preheat your oven to 350°F.
  • Chop 1 cup of vegetables and sauté in a pan with butter.
  • Whisk the eggs in a large bowl.
  • Add milk, cheese, salt a pepper to the bowl.
  • Add cooked vegetables to the bowl and mix gently.
  • Fill 10 silicone cupcake molds with the mixture.
  • Bake for 30 minutes.
  • Let cool for 10 minutes before removing from the silicone cupcake molds.
